Ingredients
- 1onion,large, diced
- 1tbspolive oil
- 2chicken breasts,large
- 1cupcarrots,sliced
- 1cupcelery,sliced
- 1tbspparsley,fresh
- 1bay leaf
- 6cupschicken broth
- 4ozegg noodles
- salt & pepper,to taste
Instructions
- Turn the Instant Pot on to Saute mode. Cook onion in olive oil until softened.
- Add remaining ingredients except for the noodles. Select Soup and High-Pressure modes and change the time to 10 minutes.
- Quick-release the pressure on the Instant Pot. Once cooked, remove and discard bay leaf. Remove chicken breasts and shred with a fork.
- Turn Instant Pot onto Saute once again. Once broth begins to boil, add egg noodles, and allow to simmer 6 to 8 minutes or until tender.
- Stir in chicken and season with salt and pepper to taste.
