Ingredients
GARLIC OIL
- ⅓ cup extra-virgin olive oil
- 3 garlic cloves, thinly sliced
SKEWERS
- 3 cups sourdough bread, cubed
- 3 cups cubed halloumi
- 4 cups cherry tomatoes
- Salt and freshly ground black pepper
- ¾ cup basil leaves
- Balsamic vinegar, as needed
Directions
MAKE THE GARLIC OIL: Combine the oil and garlic and heat gently over medium-low heat for 2 to 3 minutes. Let cool completely and then remove the garlic from the oil.
MAKE THE SKEWERS: Arrange 2 or 3 pieces of bread, 3 or 4 pieces of cheese and 3 or 4 tomatoes on each skewer. Repeat until all the skewers are assembled.
Brush the skewers with the garlic oil on both sides and season with salt and pepper. Working in batches, cook on a preheated grill or grill pan until nicely charred on both sides, 2 to 3 minutes per side.
Add a few basil leaves to the end of each skewer and then roughly chop the remaining basil and garnish the skewers with the chopped basil.
Serve the skewers immediately, drizzled with balsamic vinegar.
