FISH KEBAB

INGREDIENTS:

  • Cod / haddock / salmon – 50 g
  • Skewer or fresh rosemary stick (lower leaves removed, tips kept on) – 1 no
  • Sweet  potatoes, boiled, halved – 20 g

For the marination

  • Fresh ginger, thinly sliced – 2 small pieces
  • Lemon, juice – ½ tsp 
  • Zest of lemon – 1 lemon/ no
  • Turmeric – ½  tsp
  • Garlic – 2 cloves
  • Dried chillies, crumbled – 1-2 no
  • Fresh mint chopped – 1 tbsp
  • Yogurt – 1 tbsp
  • Salt – as per to taste 

DIRECTIONS:

Step 1: Put all the marinade ingredients except for the yogurt into a food processor and blitz until smooth. Stir in the yogurt.

Step 2: Using the skewers or rosemary sticks, skewer the fish alternately with the potatoes. Drizzle with the marinade and grill for 2 minutes each side.
