Ingredients
- 20 oz chicken breast, boneless and skinless, halved
- 15 oz white beans, (1 can), or cannellini beans, drained
- 15 oz kidney beans, (1 can), drained
- 14 oz tomatoes, (1 can), diced or crushed
- 1 cup celery, chopped
- 1 cup carrots, diced
- 2 cloves garlic, small, coarsely chopped
- 1 cup chicken broth
- ½ cup white wine
- 3 tbsp tomato paste
- 1 tbsp brown sugar
- 1½ tsp italian seasoning
- salt and ground black pepper, to taste
Instructions
- In a medium bowl, combine chicken broth, wine, tomato paste, sugar, and Italian seasoning. Whisk until evenly incorporated.
- Combine the chicken, beans, tomatoes, celery, and carrots in your crockpot.
- Pour the chicken broth mixture over the chicken and vegetables, then add the garlic. Mix well.
- Cover and cook on Low setting for 8 to 10 hours or on High for 5 to 6 hours, or until the vegetables are tender.
- Season with salt and pepper to taste. Adjust accordingly and serve!
