CHINESE CHILLI CHICKEN

INGREDIENTS:

  • Chicken (boneless) – 100 g
  • Dry Red chilies – 1- 2 no
  • Oil (for shallow frying) – ¼ 
  • Soy sauce – ½ tsp 
  • Spring onion – 2-4  no
  • Peanut (coarsely ground) – 1 tsp 
  • Garlic – 4 cloves
  • Pepper (crushed) – a pinch
  • Salt – as per taste

DIRECTIONS:

Step 1: Season the chicken with salt, pepper and soy sauce. Set aside to marinate.

Step 2: Chop the spring onions and the greens.

Step 3: Heat oil in a non-stick pan, add the red chillies, shallow fry for 1-2 minutes on medium flame, remove and set aside. 

Step 4: Then roast the peanuts on medium heat till gulden brown, remove and set aside. 

Step 5: Add the chicken cubes to the oil and shallow fry on medium heat till gulden, remove and set aside.

Step 6: Heat another non-stick pan add garlic and saute till brown. Add spring onions and chicken and toss.

Step 7: Add salt and crushed peppers and stir. Add peanuts, spring onion and toss. Serve hot.
