Aloo Shimla Mirch

Ingredients

  • ▢2 tablespoons Oil
  • ▢½ teaspoon Cumin seeds
  • ▢½ inch Cinnamon stick
  • ▢1 Bay leaf
  • ▢½ cup Red onion cut into big chunks
  • ▢2 medium or 1 ¼ cups Potatoes cut into ½ inch cubes
  • ▢1 large or 1 ¼ cup Capsicum (Green bell pepper) cut into 1 inch cubes
  • ▢¼ teaspoon Turmeric powder
  • ▢1 teaspoon Red chili powder
  • ▢½ cup Water
  • ▢Salt to taste
  • ▢¼ teaspoon Garam masala

Instructions 

Step 1: Heat the oil in a pan on medium heat. Once hot add cumin seeds and let them sizzle a bit.

Step 2:Add cinnamon stick and bay leaf. Saute for 30-40 seconds or until you get a nice aroma of toasted cinnamon.

Step 3:Add chopped onion and cook until it starts to soften (for around 3 minutes).

Step 4:Add potatoes, bell pepper, salt, turmeric powder and red chili powder. Also, add water and stir well.

Step 5:Cover the pan and cook until potatoes are fork-tender. It takes around 12-15 minutes. Do stir one or twice in between to make sure that it is not sticking to the bottom of the pan. By this time all the water is evaporated and thick gravy is coated to aloo capsicum sabzi.

Step 6:Lastly, add garam masala and mix. Turn off the stove and keep the pan covered for 5 minutes so all the masala has time to mingle. Serve aloo shimla mirch sabji warm.
