Instant Pot Chicken Noodle Soup Recipe

Ingredients

  • 1onion,large, diced
  • 1tbspolive oil
  • 2chicken breasts,large
  • 1cupcarrots,sliced
  • 1cupcelery,sliced
  • 1tbspparsley,fresh
  • 1bay leaf
  • 6cupschicken broth
  • 4ozegg noodles
  • salt & pepper,to taste

Instructions

  1. Turn the Instant Pot on to Saute mode. Cook onion in olive oil until softened.
  2. Add remaining ingredients except for the noodles. Select Soup and High-Pressure modes and change the time to 10 minutes.
  3. Quick-release the pressure on the Instant Pot. Once cooked, remove and discard bay leaf. Remove chicken breasts and shred with a fork.
  4. Turn Instant Pot onto Saute once again. Once broth begins to boil, add egg noodles, and allow to simmer 6 to 8 minutes or until tender.
  5. Stir in chicken and season with salt and pepper to taste.
